A fridge full of food and I managed to select the weirdest combo and burn the pak choi.
I’ve been trying to get my diet back on track to make sure I’ve got optimum energy levels to train for the marathon. I placed a big Ocado order of protein, fruit, veg and tasty carbs and had planned to make my lunches and be chef supreme this week. Two words: I failed!
Last night was a classic Steph moment when I decided that perhaps scampi, egg noodles and pak choi would be an interesting combo. I overcooked the noodles, undercooked the scampi and decided to fry (yes, fry!) the pak choi! I’m normally the steam queen with veg so I’ve no idea what possessed me. Needless to say, my dinner was somewhat lacking in lustre.
Tonight I’m determined to redeem myself in the kitchen. Let’s see how that turns out. 70 days and counting until Paris!
